Every month my partner Tim and I climb into our van and take the 500 mile trip from Brighton to northern Spain to pick up a different kind of honey, one that hasn't been tampered with.

 

It comes from this beekeeper called Ramon, who lives down a little back road in Aragon, Spain.

 

We take whatever he has on offer. Right now we've just got a fresh supply of heather, chestnut, lemon blossom and orange blossom.

 

 

Ramon's honeys are mono floral, meaning the bees collect the nectar predominantly from particular plant species, like heather or the orange tree. They go to the flowers that are nearest to the hive, so Ramon has hives - for instance - in an oak forest.

 

Tim and I share a passion for good honey that is raw.

 

We discovered Ramon's honey whilst on holiday in the Spanish Pyrenees and we were knocked out by the absolutely amazing flavour, neither of us had ever tasted anything like it 

 

Every time we went back to the Pyrenees we returned home with a selection of honeys: orange blossom honey, lavender honey, thyme honey, heather honey and rosemary honey to give as presents to friends and family, who were also stunned by the superb flavour. Then it was proving so popular we decided to start selling it.

How Ramon's Raw Honey Is Made

 

Ramon is absolutely passionate about producing natural unadulterated honey. His honey is made by the Iberian Black Bee in some of Spain's most remote areas, the Pyrenees mountains and other pristine areas with low population and little pollution.


But I'll let him explain to you about his approach to honey production in his own words. When we first made contact with Ramon he sent us a letter, excerpts of which are contained below 


A letter from Ramon

I am the one who writes to you and I am the beekeeper. I try to produce honey in the traditional way, not in the modern way, where honey is often adulterated and where pasteurisation and filtration remove all the goodness making a lot of honey no more than a sweetener, without the health giving elements.

My wife Begona, is dedicated to the packaging and distribution.  My children are also involved we are a small family firm. The bees live in traditional style wood beehives.

The honey is always extracted from near the sides of the beehive, therefore always she is fresh, of 2 or 3 months. When it is removed from the hives it is transported to the mieleria (where the honey is extracted) on a daily basis.

The extraction of the honey from the honeycombs is by centrifugal force, it is then passed through a coarse filter which lets pass all the grains of pollen but takes out debris. It is then left to stand for 10 days. This honey isn't heated, it is warmed slightly when the weather is colder to get it into the jars, but never more than 38C.

Thanks to this form of production the honey maintains all its properties (flavour, scent and characteristic colour of each honey) along with all the enzymes that the crop of the bee contributes that are so beneficial for health. We really make a Honey natural, like the one of the beekeepers of the past.

Ramon doesn't produce huge amounts of honey because he is dedicated to quality not quantity. We're getting as much of it as we can, but this sells quickly. This really is a very special and unusual kind of honey.

 

The Six Main Ways Ramon's Honey Can Benefit Your Body
