If you really want natural honey, with all the natural benefits, you're faced with a big problem. Because whether you or I like it or not the big honey producers are emasculating one of the finest natural substances known to man - and we're not even being given the choice of buying it in its natural unprocessed form in most shops.

Yet most shoppers aren't aware of this because the choice available at supermarkets seems so big, and the discerning shopper may think that the organic honey is equivalent to raw honey.
However, the fact is that unless it's clearly stated even the organic honey has been pasteurised and ultra filtered - processes which remove the natural goodness.
Why do the producers mess with such a natural healthy product in this way?
Maybe it's because they think the consumer wants honey that is easy to pour and very smooth. Pasteurisation breaks down the crystals that naturally form in raw honey, keeping it runny. And ultra filtration makes the honey very smooth.
